  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn kernels
  • 1 jalapeño, sliced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 4 corn tortillas, cut into strips

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until fragrant.
  2. Add cooked chicken, diced tomatoes, black beans, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  3. Reduce heat and simmer for 20 minutes.
  4. Add corn and jalapeño slices, cooking for an additional 5 minutes.
