A comforting chicken pot pie soup flavored with turkey bacon, perfect for chilly nights.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1/2 cup peas, frozen
  • 1/2 cup onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add butter and onions. Sauté until onions are translucent.
  3. Add the carrots, celery, and potatoes. Cook for about 5 minutes.
  4. Stir in the flour and cook for an additional minute.
  5. Add the chicken broth, shredded chicken, spices, and bring to a boil.
  6. Reduce to a simmer and add cream and frozen peas. Cook for another 5 minutes.
  7. Serve hot, garnished with turkey bacon.

Notes

  • This soup can be made ahead of time and reheated.
  • Adjust the thickness by adding more or less cream.
