Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  2. Add onion, carrots, celery, and garlic to the pot. Cook until vegetables are tender, about 5 minutes.
  3. Pour in chicken broth and bring to a simmer. Add the chicken back to the pot.
  4. Stir in peas, thyme, salt, and pepper. Simmer for 15 minutes.
  5. In a small bowl, whisk together flour and cream, then stir into the soup. Cook until thickened, about 5 minutes.
  6. Garnish with fresh parsley before serving.

Notes

  • This soup is perfect for meal prep and can be frozen for later use.
  • For a thicker soup, reduce the amount of chicken broth.
