- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups celery, diced
- 1/2 cup peas
- 3 cups chicken broth
- 2 cups shredded cooked chicken
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup frozen corn
- 1/4 cup all-purpose flour
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Remove the bacon and chop into pieces. In the same pot, add the onion, garlic, carrots, and celery. Sauté until the vegetables are tender.
- Stir in the peas, chicken broth, shredded chicken, thyme, salt, and pepper. Bring to a simmer.
- In a bowl, whisk together the heavy cream and flour until smooth. Slowly add to the soup, stirring continuously until thickened.
- Add the corn and bacon back to the pot. Cook for an additional 5 minutes.
- Serve warm, garnished with parsley if desired.
