This Chicken Pot Pie Soup is the ultimate comfort food, made creamy and delicious with the addition of turkey bacon.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, diced
  • 1/2 cup peas
  • 3 cups chicken broth
  • 2 cups shredded cooked chicken
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup frozen corn
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Remove the bacon and chop into pieces. In the same pot, add the onion, garlic, carrots, and celery. Sauté until the vegetables are tender.
  3. Stir in the peas, chicken broth, shredded chicken, thyme, salt, and pepper. Bring to a simmer.
  4. In a bowl, whisk together the heavy cream and flour until smooth. Slowly add to the soup, stirring continuously until thickened.
  5. Add the corn and bacon back to the pot. Cook for an additional 5 minutes.
  6. Serve warm, garnished with parsley if desired.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • For a lighter version, use low-fat cream or milk.
