A comforting soup version of classic chicken pot pie, enhanced with a turkey bacon twist for added flavor.

  • 1 pound chicken breast, diced
  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, cubed
  • 1/2 cup frozen peas
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. Add diced chicken to the pot and cook until no longer pink.
  3. Add carrots, celery, and potatoes; cook for about 5 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Add peas and heavy cream; season with thyme, salt, and pepper.
  6. Cook for an additional 10-15 minutes until vegetables are tender.
  7. Serve topped with crispy turkey bacon.
