- 2 cups chicken broth
- 1 can diced tomatoes
- 1 can enchilada sauce
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 bell pepper, diced
- 1 cup corn
- 1 cup black beans, drained
- 2 cups shredded cheese
- 1 avocado, diced
- In a large pot, combine chicken, broth, tomatoes, and enchilada sauce.
- Add onion, garlic, cumin, chili powder, bell pepper, corn, and black beans.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Shred the chicken and return it to the pot.
