  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 can enchilada sauce
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, diced
  • 1 cup corn
  • 1 cup black beans, drained
  • 2 cups shredded cheese
  • 1 avocado, diced

Instructions

  1. In a large pot, combine chicken, broth, tomatoes, and enchilada sauce.
  2. Add onion, garlic, cumin, chili powder, bell pepper, corn, and black beans.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Shred the chicken and return it to the pot.
  5. Stir in half of the shredded cheese until melted.
  6. Serve hot, topped with remaining cheese and avocado.

Notes

  • This soup can be served with tortilla chips for added crunch.
  • For a spicier soup, add jalapeños or cayenne pepper.
