  • 1 pound chicken breasts, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 small onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and cook until no longer pink.
  3. Add carrots, celery, and onion to the pot, cooking until tender.
  4. Pour in chicken broth and season with thyme, salt, and pepper; bring to a boil.
  5. In a separate bowl, mix flour, baking powder, and salt. Stir in milk until combined.
  6. Drop spoonfuls of the dumpling mixture into the simmering soup.
  7. Cover and cook for 15 minutes until dumplings are fluffy.
  8. Stir in parsley and serve hot.
