- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, chopped
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1 cup milk
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
- Add carrots and celery, cooking for an additional 5 minutes.
- Pour in chicken broth and add cooked chicken, thyme, salt, and pepper. Bring to a boil.
- In a bowl, mix flour, baking powder, and salt. Stir in melted butter and milk until just combined.

- Reduce heat and cover, cooking for 15 minutes until dumplings are cooked through.
