Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Add carrots and celery, cooking for an additional 5 minutes.
  3. Pour in chicken broth and add cooked chicken, thyme, salt, and pepper. Bring to a boil.
  4. In a bowl, mix flour, baking powder, and salt. Stir in melted butter and milk until just combined.
  5. Drop spoonfuls of the dumpling mixture into the boiling soup.
  6. Reduce heat and cover, cooking for 15 minutes until dumplings are cooked through.
  7. Serve hot and enjoy!

Notes

  • For a richer flavor, use homemade chicken broth.
