  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 cups frozen peas
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken and cook until no longer pink.
  2. Add onion, carrots, celery, and garlic. Sauté until vegetables are tender.
  3. Pour in chicken broth and add thyme. Bring to a boil.
  4. In a bowl, mix flour, baking powder, salt, and pepper. Stir in milk until combined.
  5. Drop spoonfuls of dough into the boiling soup. Cook for about 15 minutes until dumplings are fluffy.
  6. Add frozen peas and cook for another 5 minutes. Season with salt and pepper as needed.

Notes

  • For added flavor, you can use rotisserie chicken.
  • Feel free to add other vegetables like corn or green beans.
