- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 2 cups frozen peas
- 1 cup flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup milk
- In a large pot, heat olive oil over medium heat. Add chicken and cook until no longer pink.
- Add onion, carrots, celery, and garlic. Sauté until vegetables are tender.
- Pour in chicken broth and add thyme. Bring to a boil.
- In a bowl, mix flour, baking powder, salt, and pepper. Stir in milk until combined.
- Drop spoonfuls of dough into the boiling soup. Cook for about 15 minutes until dumplings are fluffy.
- Add frozen peas and cook for another 5 minutes. Season with salt and pepper as needed.
