  • 1 pound boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  2. In a large skillet, heat olive oil over medium-high heat, add the chicken, and cook until browned and cooked through, around 6-7 minutes per side.
  3. Remove the chicken from the skillet, and in the same pan, add the onion, bell pepper, and garlic; sauté until softened.
  4. Add the orzo and chicken broth to the skillet, bring to a boil, then reduce heat and simmer until the orzo is al dente.
  5. Slice the chicken and return to the skillet, mix well to combine.
  6. Garnish with fresh parsley before serving.
