A fresh and delightful summer dish featuring creamy burrata and sweet roasted tomatoes.

Ingredients

  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 ball of burrata
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cherry tomatoes on a baking sheet.
  3. Drizzle olive oil and balsamic vinegar over the tomatoes, and sprinkle with salt and pepper.
  4. Roast in the oven for about 20 minutes, or until the tomatoes are soft.
  5. Remove from the oven and let cool slightly.
  6. On a serving plate, place the burrata and pour the roasted tomatoes over the top.
  7. Garnish with fresh basil.

Notes

  • This dish is best served fresh but can be stored for up to 2 days in the refrigerator.
