2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups chopped apples
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
In a bowl, mix together flour, baking soda, salt, cinnamon, and nutmeg.
In another bowl, cream together butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition, then stir in the vanilla.
Gradually mix the dry ingredients into the wet mixture.
Fold in the chopped apples.
Pour the batter into the prepared loaf pan.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
Let it cool in the pan for 10 minutes before transferring to a wire rack.
